Ashley - Server

Baltimore
Ashley has been a server with us since February of 2015. She is also a co-founder and on-air contributor for Glenn Clark Radio which broadcasts live everyday. Her sports-focused radio station will soon be launching live Ravens’ player shows in the fall and doing live broadcasts with ‘B-more Around Town’ at various locations. Ashley’s “WTF News Daily” can be heard everyday starting at 11am by visiting GlennClarkRadio.com or using iTunes (or at our daily family meal and shift meeting!). She has spent several years in media management and is excited to be part of our family.

Vinny – Foodrunner

Baltimore
He may be young but Vinny attributes his old-soul wisdom and lively charm to his life experiences in one of Baltimore’s toughest neighborhoods. Charismatic and fun-loving, this Nick Cannon look-alike joined us as a foodrunner in 2014. He has been a bright ray of sunshine at Birroteca ever since and says our “big family” at the restaurant is his most cherished part of work. Vinny dreams of one day leaving the country to travel and discover different places in the world and is hopeful in his pursuit of human rights and equality for everyone. What a dreamboat!

Sarah - Server

Baltimore
There are two things that Sarah says she could never live without: wine and chocolate ice cream. A server at Birroteca since September 2014 (and an instant rockstar!), Sarah is a native of Baltimore County. She is currently studying social work and is passionate about non-profit endeavors and traveling. She dreams of one day being able to travel the world “doing charity work with children.” A lover of warm weather, she enjoys gardening, hiking, and visiting the beach. Sarah credits her mother as a “hard working, passionate woman,” who has been a role model in her life and career. When asked about what makes her happy, Sarah says “my boyfriend, my cat, and a good book.” She recently traveled to Honduras to assist in building an orphanage for children in need.

Joe – Expeditor

Baltimore
Self-proclaimed foodie and video game addict, “Mayo” has been our kitchen expeditor since the beginning of 2013. He is currently an avid Game of Thrones and Walking dead fan and he is always up-to-date on all the latest and greatest shows. Raised in a small neighborhood in Dundalk, Mayo has a lot of love for his mom, who is his role model. With a sharp memory and a keen sense for Birroteca’s vision, Mayo ensures that all of our rustic, Italian-inspired dishes are plated, garnished, and beautifully presented to each and every one of our guests. His favorite thing about his job? “My family works here!” Always giving his coworkers a hug and a farewell each night before we close, Mayo has a heart of gold and is dedicated to all of the things that make Birroteca a great place to eat, drink, and work! We couldn’t do it without him!

Reese - Foodrunner

Baltimore
He makes ice cream! He designs clothing! He loves baked beans! Reese has been a foodrunner at Birroteca since 2014 and is our in-house Taharka Bros. aficionado, always making sure we are never without their famous olive oil and sea salt ice cream. If he tried out for American Idol, Reese says Micheal Jackson’s “Beat It” would be his ideal song performance. Born and raised in West Baltimore, he takes inspiration in life from his loving mother who “took care of me and my sister all by herself!” His main goals in life include providing for his loved ones, building housing for the homeless, and helping to create a world where “everyone becomes equal.”

Megan - Server

Baltimore
Our server/recycling-aficionado since the summer of 2014, Megan is an avid “puppy enthusiast.” Her favorite way to spend a Sunday afternoon is “in sweatpants, hair-tied, chillin’, with no make-up on.” Megan says if she came across a million dollars that she would invest in “copious amounts of Chipotle,” and then begin traveling the world. Her idol is Beyonce which she believes is self-explanatory. When she isn’t showing the rest of the staff pictures of her three adorable dogs or subtly dropping quotes from “Mean Girls,” Megan might be found reading a new book or sharing her donuts with strangers.

Louis - Server

Baltimore
Host God since October of 2014, Louis or “Sweet Lou” as the staff affectionately calls him, recently joined the ranks of our serving staff. Always poised and professional, Louis is known for his great relationship with guests at the front door. Simply stated, the reason Louis enjoys being a part of our family is because of “all his homies.”

Derek – Dish Prep

Baltimore
Born and raised in Charm City, Derek loves the pizza at Birroteca almost as much as the employees, which he has nicknamed “The Brady Bunch.” As our dish prep since August of 2014, Derek is dedicated to being successful, working hard, and keeping the prep kitchen filled with the best tunes for the staff! Thanks D-Rock!

Dave – Bartender

Dave has just recently returned to the States after his second European tour as a member of Black Lung, a Baltimore based trio. As a music production graduate from Towson University, Dave says he appreciates the support that his Birroteca family gives to his growing music career. “It’s wonderful to know that while I’m on the road with Black Lung or we’re playing a show overseas, that I still have a great job to come home to,” he says. He enjoys the unique, local vibe that Birroteca has brought to the Baltimore food scene, and is fond of helping ensure some of our first-time guests that are used to typical beers and bar food have a new experience with our craft beers, spirits, and handmade cocktails. His life mantra is “Shikiki!”

Laura – Server

Baltimore
As a server at Birroteca since December of 2013, Laura also created our “@birroteca_draws” Instagram account, which showcases some of the many pencil drawings that guests leave at our tables each night. Laura loves her job at Birroteca because she “appreciates that I’m included in creative projects.” Currently studying to be a counselor, Laura has also been writing and practicing piano since a young age. She enjoys biking the NCR-trail and “mod-podging everything in the house.” She is “obsessed” with her diabetic puggle, Zoey. Laura sometimes hosts what has become known as “Monday Night Tarot” for her coworkers, where she reads our 10-card fortunes on the patio after we close each week. She hopes you have enjoyed reading these bios, probably because she wrote them all!

Tess McCall-Greeter

If you don’t see Tess’ smiling face when you enter Birroteca, you’ll find her hiking and hanging out with her friends. Her favorite thing about working at Birroteca is the friendships she’s made and how much she feels like part of a giant family! She has a passion for art, and making people laugh, which she never disappoints! She never misses the opportunity to watch A League of Their Own, and insists that everyone read The Fault in Our Stars, by John Green. If she could be anywhere today, it would be fishing in the Pacific, with a beer in hand! Her role model is her Pop Pop. “He’s the strongest, most caring and funniest person. Always there for anyone”….much like herself.

Chris Kraus- Food Runner/Dish Prep

Chris began working at Birroteca in August of 2015. Since then, he has worked his way up from dish prep, to being a great food runner. He’s passionate about metal music, and looks up to Dimebag Darrel because he was such a “Metal God”!

Amanda-Server

When not at Birroteca, she can be found with friends and family. She’s known for her big heart and willingness to help any and everyone. She loves scrapbooking and laughs at just about everything. In fact, the funniest thing that’s happened to her recently is she got stuck in an automatic car wash that wouldn’t stop running, for over 15 minutes! She’s super adventurous, and while hiking during a recent trip to Las Vegas and the Valley of Fire, she and a friend decided to go off trail and got lost. If she were ever to win the lottery, you’d find her enjoying the island life on her own private island. Until she hits the lottery, she’ll be serving you brussel sprouts at Birroteca because she loves how friendly, helpful, and caring everyone that works there is. “Everyone helps each other out, it’s a big team!”

Dylan-Saute, Pizza, Prep

Dylan is a Bel Air native that spends all of his time at Birroteca these days. He loves what he does at Birroteca because it’s a great learning experience for him. He’s very passionate about his VW, alternative, and Trap music. If he could have any superpower imaginable, he’d have the ability to freeze time!

Katie Glauser-Food Runner/Dish Prep

Moving to Bel Air from Salt Lake City to be closer to her mom, Katie’s favorite thing about working at Birroteca is how much everyone gets along with each other. When chipper little Katie is not zipping around the restaurant like the flash, she can be found on the track and field, or studying for school. If she were ever to win the lottery, she’d run away to the beach, and pay for med school! Hopefully someday, that’ll happen!

Chrissy – Server/Bartender

Chrissy is very passionate about making sure everyone is enjoying themselves. She loves spending time with her fellow coworkers, but if she were ever to win the lottery, she’d disappear in a heartbeat to travel the world…especially Eurpoe. In fact, someday when there is a movie produced about her fabulous life, she will choose Julia Roberts to portray her! Grease is a timeless classic, that she’ll never get tired of watching. Little secret fun fact: if she ever had the opportunity to go on American Idol, she’d belt out some Janis Joplin for us!

Jordan – Head Server and Trainer

She’s our lead server, our loyal teacher, and our #1 fan! Jordan joined our family shortly after we opened in 2012 and has since secured her place as our staff trainer, Instagram artist, and in-house cat lady. She is passionate about food (“specifically carbs”) and thrift store hunting. She says that Lucille Ball, her lifelong role model, taught her that “it’s okay to be silly and not take myself too seriously!” Jordan loves Birroteca for “my work family. What would I do without them?!”

Sara - Server

Sara, has lived in Harford County her whole life. She is laid back and reserved. In addition, she has been serving and bartending for about six years. Since Birroteca opened, Sara has been obsessed with the Bianco pizza! She enjoys working at Birroteca because of the family atmosphere.

Logan - Server

Bel Air
Logan is our basketball fanatic, he loves watching it and when he’s not at Birroteca, he’s at the basketball courts. Thinking like a future engineer, if Logan wins the lottery he’s going to use that money towards alternative clean energy. He says the best thing about working at Birroteca is the awesome food! And when asked what makes him laugh his answer was, “Bill” (our general manager.) Logan’s perfect world would be no wars, no pain, and everyone getting along and enjoying life!

Anna - Server

Anna loves watching any Quentin Tarantino movie almost as much as she loves getting tattoos, which is something she could never give up. When she hits the lottery, the first thing she will be doing is heading to the BMW dealership. But for now when she’s not working at Birroteca, you can find her most likely taking a nap. When asked what she would be doing if she could do anything right now she answered, “travelling.” Anna’s favorite thing about working at Birroteca is the craft beer!

Mak - Server

Mak has been in the restaurant business since she was 16 and has just recently spent a summer working in Ocean City, MD. Mak has just completed her A.S. in Chemistry and will soon be attending the dental hygiene program at CCBC. Do not be alarmed is she expresses strange behavior such as something you believe should be laughter turning into snorts, this is completely normal!

Christine - Bartender

Christine has been getting “it lit” at Birroteca since May of 2016. Being known as the life of the party, Christine says that if she was any Birroteca menu item she would be the chickpeas, “because they are vegetarian and spicy!” On a weekend afternoon, you can find her thrifting, eating spicy tuna rolls or dreaming about going on tour with Justin Beiber. What’s her favorite thing about working at Birroteca? “That we really are a family!”

Nicolette - Server

Nicolette calls Hampden home. Her passions include performing improv comedy (she frequently performs in DC), making her friends and family laugh and hanging out with animals (she also walks dogs during the day!). What’s her biggest dream? “To become best friends with Kristen Wigg and spend every day with her.” What else? “To travel the world performing comedy and saving animals.”

Justine - Bartender

A Hampden native and self-described “spunky” person, Justine joined our family in February of 2016. When she isn’t working, you’ll find her home with her two kids, taking family trips to the Baltimore Farmers Market or getting tattooed. What Birroteca menu item would she be? “The Brussels sprouts, because they are awesome!”

Kevin Lee - Food Runner

After joining our family in January of 2014, Kevin Lee has been a jack of all trades. Kevin, who says his spirit animal is a fox, currently splits his time between foodrunning and expediting. In his spare time, Kevin is an avid painter, video game player and ramen eater. If he won the lottery? You’d find him on a plane “off to explore new places and try new things! Mostly food!”

Shane - Server

Shane, a Birroteca server since 2015, is a craft beer enthusiast and says he couldn’t live without it. “Double IPA is life!” When not at work, Shane says check the golf course first. His perfect day would include an early morning round of golf, followed by football watching, and a good beer with friends. Birroteca’s unofficial loveable little brother says if he won the lottery he’d say ‘goodbye to Baltimore, and hello to a sailboat “to travel the world.” We hope he never wins the lottery.

Michael - Food Runner

Mike is all about sports so it’s fitting that his favorite movie would be “We Are Marshall.” He loves watching the Ravens and Orioles play and also likes to play football himself. If he wins the lottery he plans on buying Ravens and Orioles season tickets! Mike’s role model is his dad because of his great work ethic and being a family man. When asked what his favorite thing about working at Birroteca is Mike answered, “being treated like family.”

Leeanne - Kitchen Lead

Leeanne, most known for mohawk and adorable stature, joined our team in October of 2014. Our fearless kitchen lead, can be found on her days off spending time with friends and family or eating spicy foods. Who’s her role model? Leeanne says Jordan, our lead server, and Bruce Lee “because he is one of the most inspirational and philosophical people who ever walked this planet!” If she won the lottery, what would she do? “Keep working!”

Erin - Assistant General Manager

Erin, our unofficial ‘Birro Mom’, has been looking after us since May of 2016. Always available to share a kind word, the first aid kit, or sunscreen, Erin says her spirit animal is an elephant because they are “powerful, protective and natural problem solvers.” On a day off, you’ll find her watching “the Real Housewives of anything!” or being a general homebody. Passionate about hospitality, Erin says she appreciates finding out what makes each guests’ experience special because “there is nothing more intimate than ones’ dining experience!” She also loves scarves, lots of scarves. 


How do they help your business?

Josh - General Manager

Baltimore

Josh, our General Manager since June of 2016, is the father of two. On a day off, that’s who you will find him with! A perfect day would include spending time with his wife and children while watching baseball, drinking beer and eating pizza. What can’t he stop talking about? “Music! Everything but country!” If stranded on a deserted island, Josh says he “could live off the land except for a big bottle of scotch, his Mets’ baseball cap and a hammock.”


Renee - Cook

Baltimore
Renee, one of our newest all-stars, attends L’Academie de Cuisine and has chosen Birroteca as her apprenticeship location. Renee says she made this decision because she “was looking for something fast paced with the ability to grow into a family.” Outside of work, she also works two other jobs but still finds the time to hang out with her dogs and cook for family at home.

Tom - Bartender

Baltimore
Originally from Connecticut, Tom moved to Baltimore to pursue a degree at nearby MICA. Tom plans on using his natural ability (and lifelong interest) in drawing to pursue a career in tattooing. His time off from Birroteca and art commissions is usually spent “biking or cooking.” A huge part of why Tom loves working at Birroteca is his interest in culinary arts. “I enjoy working at Birroteca because talking about food is one of the best things about food!” How does Tom want to be remembered? “As someone who believes in quality, character and creativity!”

Nick- Server

Baltimore
Nick recently joined our family in April of 2016 but being our newest recruit hasn’t stopped him from quickly charming both guests and team members. His time outside of Birroteca is spent being an adjunct Professor of Philosophy at CCBC, spending time with his daughter (affectionately nicknamed Lu), or lounging and reading on his couch. Nick says his spirit animal is “a sloth!” and he never misses an opportunity to rewatch Harry Potter or reread Moby Dick.

Josh - Cook

Baltimore
Josh, our ‘jack of all trades’, joined our family in 2015. At Birroteca, you can find him behind our bar at the charcuterie station or (if you wake up early enough) catch him working morning prep! Josh says he could never give up music and if given the opportunity to audition for American Idol he says he’d “wow the judges singing ‘Total Eclipse of the Heart’!” Rock on, Josh!

Jason - Server

Baltimore

A California native, Jason has been living in Baltimore for 20 years. Jason joined our Birroteca family in February of 2016 and has been charming his guest ever since. Outside of Birroteca, you can find Jason gardening or fishing because he “loves anything outdoors!” A yoga enthusiast, Jason makes sure he attends yoga classes at least twice a week. Namaste!
